Granite and Shale soils. Established vineyards.

Naturally fermented. Punched-down two- to four-times daily. Aged in older French oak barrels of various sizes, ranging from 225L, 300L, and 500L to 2000L foudres, as well as a few concrete eggs, for up to 14 months.
